BEST Pumpkin Mousse Recipe

All star easy to follow recipe!

By  Chef  Chris Tong, My Private Chef!

Perfect for Thanksgiving or holiday dinners!

Light and fluffy

Pumpkin Mousse with Ginger Snaps

Serves 8-10

Ingredients:

1 (15-ounce) canned pumpkin

3 cups heavy whipping cream

3/4-cup superfine sugar

1/2-teaspoon pumpkin pie spice

1-tablespoon vanilla extract

Ginger snaps, for garnish

Preparation:

Combine pumpkin, 1-cup heavy whipping cream, sugar and spice in a medium saucepan.

Simmer over medium heat for 5 minutes. Cool fully.

Whip remaining heavy cream and vanilla to soft peaks and fold into cooled pumpkin mixture.

Pour into a serving dish and crumble the ginger snaps over top before serving.

Most Expensive Food in the World

From a guest author :  It’s just another Paris Hilton Instagram post showing the room service meal she ordered during her Shanghai sojourn last November. “I love Chinese food,” she commented. But there’s one problem, except for the fried rice, the dishes were hardly Chinese: panini, creamy soup, spaghetti, and some other general meals. I wouldn’t fault her though, and the public seems to understand her little culinary mishap. After all, the Paris Hiltons amidst us are more at home eating fancy meals than being confronted by an unassuming panini. Well then, let’s give Paris Hilton one fancy menu.

I thought to put together a set of meals for one day in this infographic, featuring the most expensive foods in the world. These foods are unabashedly opulent, but before you get upset, many of these items were created for fundraising programs (like an auction). Okay, some are truly lavish beyond reason. To put their prices in perspective, our total bill by dinner’s end easily matches the annual income of an average American household, whose weekly meal budget is estimated by the U.S. Department of Agriculture to be somewhere from $130 to $250 for a family of four.

There’s another reason why a dish can be very expensive: the chef sprinkled some diamonds, luxury pearls, or gold as a side attraction, such as the spoon, plate, goblet, or a decor. I thought it’s cheating. You can always make anything the most expensive by throwing in some diamonds, the most expensive toilet for instance.

Still, some dishes are easy to imagine why they’re expensive: the ingredients are either rare or take a lot of time and effort to source. What makes Wagyu beef literally a cut above the rest? The cow where the beef comes from is massaged and fed on beer every single day of its short bovine life. Saffron, a most prized spice, requires 75,000 filaments to make a pound!

We have more surprises in this day’s menu, from an ice cream whose price leaves you deathly cold, to a putrid cake slice that the ultra rich had craved to buy.

Rick Bayless has Something Special Up His Sleeve

He  says it’s “sort of in the Frontera world but it’s super rustic, and there’s virtually nothing like it in the United States.”  – He says the project will done in a year – he will make a more formal announcement with details in about 4 months from now.
And  XOCO  comes to Wicker Park. While the cuisine will be similar to the original XOCO in River North, the new location will be much larger, feature table service and a bar component with local beer on tap.

Charlie Trotter Dead Today at 54

Perhaps the most famed chef in the history of this city is gone. Charlie Trotter was found dead at his Lincoln Park home this morning. He was 54.

The Tribune reports
that Trotter’s son Dylan found Charlie unconscious and called an
ambulance. He was soon pronounced dead at Northwestern Memorial
Hospital.

Trotter closed his groundbreaking eponymous restaurant last year and has been in and out of the news since. Trotter was sued this past summer.  Claims that he sold bogus wine?
That was  the accusation in a lawsuit filed in federal court by a buyer of
one of Trotter’s esteemed bottles. The suit sought  $75,000 in damages.
Trotter denied the allegations, calling it “buyer’s remorse.”

In 1995 he was seen with Julia Child in this charming clip!

Buick Discovery Tour + Food & Wine = New Consumers

Last week, we were  invited to experience The Buick Discovery Tour, an
event where consumers are invited to test drive Buick vehicles and also  attend  cooking demonstrations and interactive experiences with celebrity
chef 
Michael Psilakis, and pastry chefs Gale Gand and  Ben Roche 
. Plus wine expert Michael Green shared tips about wine. The event was held across the country in  10 cities.


What do you do when people have lost faith in your brand? Showcasing
a fresh, new lineup but still facing antiquated opinions about its
products, Buick is using a different strategy to reach luxury buyers –
food. And with a buy rate nearly triple that of the industry norm and

Missed Baconfest? Check out Cochon 555 April 28th

LOVE  PORK?  but  you missed Baconfest last weekend, you can still get your fill of bacon and much more this coming Sunday at Cochon555.  And this year, Chicago has a tradition to uphold!  The 2012 winner from Chicago was Jason Vincent of Nightwood Restaurant.  He then went on to win the Grand Cochon event in Aspen proving that Chicago is the most amazing culinary city in the country.

 

Arriving in The Windy City on Sunday, April 28 at the Four Seasons Hotel Chicago, Cochon 555,
the pork-centric tour, gathers together five chefs, five pigs and five
wineries at each event – ultimately touching down in 10 cities across
the country and bringing its message of nose-to-tail cooking, breed
diversity and family farming to food enthusiasts nationwide.

Each Cochon 555 event challenges five local chefs to prepare a menu
created from the entirety of heritage breed pigs for an audience of
pork-loving epicureans and celebrated judges. Chefs competing for Prince
or Princess of Pork in Chicago are Kevin Hickey (Allium); Cosmo Goss (Publican Quality Meats); Matthias Merges (Yusho); Ryan Poli (Tavernita); and Josh Adams
(June Restaurant).  Guests will be treated to an epic pork feast
alongside wines from five small family-owned wineries. 

Twenty judges and
400 guests help decide the winning chef, who is crowned the Prince of
Pork and will compete against other regional winners at the finale Grand
Cochon event at the FOOD & WINE Classic in Aspen on Sunday, June
16.

 

Tickets are still available for both levels –

demonstration: Chicken Marengo with Crusty French Bread. The dish is named after Napoleon’s

tomatoes, onions and olives.

Paula Deen Has Diabetes and Cuts Million $ Deal with Drug Company

YOU ARE WHAT YOU EAT.

She has been criticized for promoting fat-laden, unhealthy recipes.

Now
it seems that Paula Deen – the Southern TV cook who once said she
couldn’t live without butter and a deep-fat fryer – may be set to reveal
she has Type 2 diabetes.

The news the butter and sugar industries didn’t want to believe was
coming but knew was coming has finally hit the fan.

After months of rumors, our butter queen  Paula  is about to announce that she’s been diagnosed with Type 2 diabetes.

 The Daily says
that Paula has quietly worked out a multimillion dollar deal with
Novartis, the drug she’s currently taking for her diabetes, to be their
new spokesperson.

Paula is expected to announce this any day now. A
source also says that Paula will probably change the way she cooks and
the days of making deep fried chocolate noodles with creamed cheesecake
sauce are probably  behind her.

NBC released a statement that Paula will be exclusively addressing the issue on the Today show on Tuesday morning.
